Any sort of pancake is considered a lazy meal in my house. No matter savory or sweet, I know I have the majority of the ingredients kicking around, and the result will be something quick, easy, and fit for both the adults and toddler in my household. These Zucchini Pancakes from Ina Garten are no exception, but they sure don’t taste or look like laziness! They are vibrant, fluffy, and green, and taste like the base of a gourmet meal. Read below for modifications, as these little guys are a lot to handle on their own!

How to make it an A+: As true with most of Ina’s recipes, I recommend going a little easy on the salt. As mentioned above, these little pancakes are very rich, and could really benefit from being cut with something cooling. I would dollop with Greek yogurt or Crème Fraîche, and top with either some chives or dill for a little pop. These can be made as small coins for an hors’ doeurve tray, topped again with the yogurt, and perhaps a little smoked salmon. Get creative, but rest assured, you’ll have a great starting point!
