Warm + Roasted Winter Salad Bowl

 

 

I know, I’m starting off the first couple days of spring with something titled a Warm + Roasted Winter Salad Bowl. But, don’t let the name fool you. This dish, from Oh She Glows, can be enjoyed any time of year. Most of the veggies required have summer harvest dates, anyway, so not sure why the winter typecast? Maybe because it’s warm, has pumpkin seeds and potatoes, and some maple syrup. But it’s also a beautiful spring green, including avocado, green beans, scallions, and kale. So, eat it whenever your little heart desires.

How to make it an A+:  The dressing is outstanding. Warm, roasted garlic–yes, please! I would even get a little crazy and add another clove or two. My least favorite part of the dish is probably the potatoes. All of the amazing, individual ingredients are kind of brought down by the stodginess of a basic spud. Play around with a roasted alternative–maybe some sweet potatoes, butternut squash, corn? Get creative and enjoy!
