I find energy bars a great healthy snack to have hanging around the refrigerator, as well as a great use of leftover ingredients. How to make it an A+: At first I wanted to give them a lower rating, but they started to grow on me. My initial reaction was to swap the tahini for peanut butter and omit the ginger. The ginger and the cardamom almost make the bars a little too spiced, but after starting to eat them, I really can’t stop. Either way, I’d add a big pinch of kosher salt!
