
I would probably choose Mexican as my favorite cuisine, and give me an enchilada, I’m in heaven! So, naturally, I was really excited for a single-pan, vegetarian option like these Vegetarian Enchiladas Suizas from Martha Stewart Living. Unfortunately, they didn’t live up to my dreams. Details below on how to save this recipe!

How to make it an A+: I don’t usually put recipes on here that are lower than a B- since there’s usually no saving them and you should just make something else, but this one still made the cut and there still is hope! The first bite is like “Oh my goodness, so good, A+,” but after that, it’s just too much! Way, way too intense for my liking and that is saying a lot coming from a big flavor gal! Yes, it depends on your green salsa brand, she suggests La Costeña which I could not find, but keep that in mind. I think the quickest fix, though, would be adding a ton of black beans (mashed or not) to balance out all that flavor and greasiness. And, additional sour cream or a ton of Greek yogurt on top helps!! Good luck!
