Pregnancy cravings are real! I had to have rice pudding this week so tried out this Vanilla Rice Pudding with Blueberry Compote from Cosmopolitan magazine. It was published back in 2012 from Sophie Wright’s cookbook. Thoughts below…

How to make it an A+: There are so many better rice pudding recipes out there. After learning this is originally a UK recipe, it makes sense why it misses the mark. Using superfine sugar as a substitute for caster sugar, and the rice we have here vs. there, it’s just not an apples to apples recipe. I had to add a lot more milk and cook a lot longer to ensure the dish was done. And, it was a little too sweet…
