Summer Tacos with Scallion-Peanut Relish

Apparently “Summer Tacos” mean cold tacos. I would normally prefer warm everything, but the cold feature does make this taco packable for the beach, or refreshing after a hot day. There’s a lot of flavor and a lot of spice, but be aware, this recipe makes a taco with an Asian flare. If you’re expecting a traditional, Mexican taco, this recipe is not for today. But, still try this Real Simple magagize recipe (with the modification below) and enjoy!

How to make it an A+: There’s a lot of slaw going on here. The whole thing just seems chopped! I was craving something creamy, and in a traditional, Mexican taco, I would have just added sour cream, which isn’t really possible here. Instead, try adding a peanut sauce as the base layer of this Summer Taco. There’s a link for a basic peanut sauce below.
