I have no idea what took me so long to break into Alison Roman’s cookbook that I got for Christmas!! I was just never in the mood. But, if every dish is as tasty as these Sticky Roasted Carrots with Citrus and Tahini, I will be back for more! Details on this flavorful side below!
How to make it an A+: While this side is SO tasty, it doesn’t make a lot. I would honestly double the recipe to make sure it generously can serve four. Also, During the last 10-15 minutes, I added a slab of salmon to the pan and it was an easy way to create a full meal. After eating these carrots, though, I was dreaming of roasted chicken legs nestled in between the veggies! Either way, you’ll be happy!
