This very tasty, light, Spring Vegetable Pasta with Pistachios, from Real Simple magazine, was perfect to throw together rather quickly, and serve to dinner guests last night! It’s colorful–presenting beautifully–and a great way to get all the food groups in! The fresh spring flavors make this a go-to pasta for any occasion this season. Bonus: My toddler loved the leftovers!
How to make it an A+: Sprinkle with a little extra salt and pepper and feel free to add an extra handful of those toasted pistachios! It was perfect with a nice loaf of sourdough and some good salted butter.
