Spicy Italian Sausage Meatloaf

January 28, 2019

Wow. This takes meatloaf to a new level. Being from Connecticut, I know one of the state’s claims to fame is the steamed cheeseburger. The concept of a steaming ground beef results in a very moist burger, with no dried, crusty edges. While this Spicy Italian Sausage Meatloaf is not steamed, it does almost boil in it’s own drippings for the same effect.  Gone are the days of setting up a loaf on a couple of slices of white bread, in this Cravings recipe, you will bake the loaf in an actual loaf pan to allow it to stew in its flavorful juices. As if that wasn’t enough, the glaze on the top is sweet, sweet heaven.

Rating: A

How to make it an A+:  All those juices mentioned above, have to go somewhere. Place the loaf pan on a rimmed baking sheet to catch some. The rest might be reabsorbed, but can easily be spooned off before serving, or used as a gravy for a mashed potato side dish. See the next posting for the Potato and Celery Root Mash that were the perfect partner to this Sunday night main.
