I cracked open Chrissy Teigen’s newest cookbook, Cravings: Hungry for More, and tried out her Spicy Honey-Butter Carrot Coins. While my first dabble in her new publication wasn’t my absolute favorite, it went well with Martha’s Meatloaf from my previous post, and, with a few modifications, I’m sure these carrots and I will get along just fine moving forward.
How to make it an A+: My first issue with this recipe is the cook time. The carrots came out way too tender and mushy. I would either cut down the cook time or keep the carrots in larger pieces, whatever your preference. I think I needed a little more of a sweet and salty vibe in addition to the spicy, so would increase the amount of honey and sprinkle with finishing salt at the end.
