I love my U.K. recipes, especially when it comes to Indian food. They just do it right over there. It’s a lot more common of a cuisine and has really been perfected from casual takeaways, recipes to cook at home, and high-end establishments. One of my Indian go-tos, Waitrose Weekend newspaper, always has some simple weeknight hits, and this recipe for Spiced Red Lentils with Couscous & Pecans is fulfilling both my Indian food and pregnancy cravings! How to make it an A+: I love couscous, but the fine pasta paired with the lentils is a little too mushy for my texture preferences. For this reason, I’m tempted to pair with a sturdier rice, but really, the taste of it all is OUTSTANDING. So, use your judgement. And feel free to double up on those amazing candied pecans…
