I almost couldn’t make this one because of how unhealthy and just awful a can of condensed Cream of Chicken soup sounded in the recipe. It’s actually my biggest criticism of Joanna Gaines. Even though she has some recipes I refer to as “the best I’ve ever had,” with others, she often uses a ton of junk. But, once I got past the ingredients to make this guilty pleasure, her Sour Cream Chicken Enchiladas weren’t all that bad!
How to make it an A+: While I love flour tortillas instead of the typical corn in an enchilada, I would have preferred some Monterey Jack or cheddar over the mozzarella. As for the sauce, I have a lot to say. The Cream of Chicken soup is awful in it. I’d rather make a homemade sauce or just use a spicier enchilada sauce and the sour cream. Instead, it got that artificial gelled consistency. Lastly, there was too much of it. I would almost halve the sauce. I did find a couple other Sour Cream Chicken Enchilada recipes that I’d like to try in the future because the concept totally spoke to me!
