Let the apple recipes begin! After apple picking and coming home with a half bushel of apples, I’m combed through my recipe book to pick out a ton of apple-centric recipes to test! The first being this Skillet Apple Stuffing from Real Simple magazine. It’s a larger Thanksgiving side, but I halved the portion to go with tonight’s salmon fillet. How to make it an A+: The flavor is delicious, but the method is a little unnecessary. I do like the allover cast iron crispness and high heat, but I would have been just as happy with a traditional baking dish method. To stay in line with this version, just do all the tossing outside of the skillet in a larger bowl. It’s too difficult to get everything uniform when tossing within the skillet–and I only made a half portion!
