Sesame Salmon Soba Salad

Now that I’m getting a little more sleep and my feeding supply has regulated, I’m craving much healthier dietary options. This nice, light Sesame Salmon Soba Salad fit the bill, filling me up after just a short prep time. The cherry on top came in the form of salmon skin. Salty, crispy, and sprinkled on this salad upgrades the dish from your typical grocery store takeaway version, to something oh so special.

How to make it an A+: I like a little more of a kick, so in addition to the chiles sprinkled overtop, I would chop up some of the chile into the dressing and let that marry up for awhile. Really nice, though, and really easy to serve as cold leftovers the next day!
