Sea Bass with Watermelon Pico de Gallo

Cooking fish is one of those things that intimidates people. For this reason, it is something I highly recommend! It’s actually easier than it looks, but with it comes a certain “wow factor.” A home-cooked meal is transformed to restaurant quality, even though you do not have to prep or cook very long at all! Most fish cook rather quickly, and can be simply dressed but still hold beautiful flavor. This Sea Bass with Watermelon Pico de Gallo is such a fast recipe, but has a wide range of light flavors–perfect for summer!

How to make it an A+: I love the fresh flavors of the season. I would kick it up a notch, though, with some extra chopped jalapeño, or even a serrano, if you want to get crazy. Make sure you sprinkle with some nice salt!
