Yes, I know this recipe title is an uninspired mouthful. Blame Real Simple, not me. These days, they do not have titling or categorizing as their strong suits. In addition to the overly-descriptive header, this recipe is listed as a “Healthy Pick” and a “One Pot” dish. I would just like to point out that why, yes, it’s a salad, and salmon is great, it is still dressed with buttermilk and mayonnaise. There are many healthier dressing options. And, when preparing the meal, there wasn’t one pot in sight. Yes, there is one skillet, but there’s also a cutting board, a plate for resting, and a bowl to prepare the dressing. Not exactly a dish-free night is all I’m saying. It’s still delicious, and if you want to make it even unhealthier, check out my modifications below.

How to make it an A+: The dish has great flavors, but it seems to be lacking in the texture department. It looks and tastes appropriate for a side salad, but not the main event. Make it the star of the show by adding some additional ingredients. Next time, I will be adding some crumbled blue cheese and chopped, toasted walnuts.
