I find enchiladas one of the easy ways to stay on a vegetarian course. You don’t miss meat as much when it’s hidden in incredible flavors, sauces, carbs, and cheese! (Clearly, I would have a hard time being vegan.) And, so far, I’ve found Alex Snodgrass does a very good job in this department. Her healthier meals are really lovely, and these Roasted Veggie Enchiladas Verdes are no exception!
How to make it an A+: I really enjoyed, though my husband would have swapped the cauliflower for chicken!
