Roasted Root Vegetables baked with crushed coffee beans may be a stretch to my 200mg/day pregnancy coffee allowance, but if this is considered a cheat, it’s worth it! I wasn’t exactly sure what to expect with ingredients like carrots, parsnips, cumin, fennel and coffee, but sometimes that’s the excitement of cooking!
