I have a love/hate relationship with the Barefoot Contessa. Sometimes I am amazed at the beautiful, complex flavors that shine through in her simple recipes. Other times, I’m annoyed at just how simple her recipes are, especially the ones that do not seem worthy of a successful cookbook. This recipe has me torn. While I do not love the execution of this meal, I do have to say, her home-roasted peppers beat those from a jar, and are worth making again. How to make the whole dish work, though? See below.

How to make it an A+: The actual taste of this sandwich is higher than a B. It’s actually pretty darn good. But, it’s hard to want to make a sandwich full of peppers again. It leaves me wanting more. Maybe meat? Maybe another texture? Something. But, to keep the integrity of the dish, yet earn an A+ rating, I recommend taking its top off and creating open-faced appetizer portions. The flavor-packed bites, are platter-worthy and delicious in small doses that your guests would keep going back for more.
