Roasted Eggplant Parmesan

This dish can hang around my house holiday, or not, any day of the week. So far, Ina Garten’s Cook Like a Pro cookbook does not disappoint! I will definitely be making this again! Details below.

How to make it an A+: This is SO good! But, in typical Ina fashion, there is WAY too much salt and pepper. And, I’m a salt and pepper fanatic, so that’s saying a lot. Use your judgement adding it to each step of the dish. Enjoy!
