Red Wine Braised Beef and Vegetable Stew

This stew is so simple, so hearty, so rich, so delicious! And, the best part, it’s a master recipe from Delicious Magazine, which means it can later be used as the foundation for a few other amazing dinners! (Stay tuned for tomorrow’s variation.) It’s a U.K recipe, so it requires some measurement conversion googling, but beyond that, it’s pretty easy. Check out the tips below, but it’s definitely a husband-pleaser and one you should try out during these colder months!

How to make it an A+: You won’t find a British beef shin at Whole Foods, but a brisket will do just fine! Make sure you keep the heat realllll low and stir it more than recommended to prevent the bottom from burning. Sprinkle with salt, pepper and chives, and overtop of the potato and the stew, add some sour cream to help balance out how rich the dish is. A little of this stew goes a long way! Enjoy!
