I love chilaquiles! Since I always have leftover tortillas, or even tortilla chips from a takeaway meal, laying around, chilaquiles are a frequent dish around here. How to make it an A+: Don’t get me wrong, this dish is good, but since I consider chilaquiles a leftover meal, I usually get a nice jar of enchilada sauce and call it a day. If you want to go that extra mile and make the recipe’s base yourself, then you may as well keep going and throw some cotija or feta cheese and sour cream on there as well! And, as per usual, sprinkle on some salt and pepper to taste!
