This unstoppable summer weather has me craving all sorts of summer fruits, but, apparently, I am in quite the raspberry mood these days. Here, we have another raspberry-focused recipe: Chocolate-covered Katie’s Raspberry Orange Corn Muffins. Another sweet treat from my favorite, that is surprisingly healthy and low-cal, while easy enough to make quickly in the morning before your stomach starts to hate you. A perfect on-the-go breakfast or afternoon snack!
How to make it an A+: Love the cornmeal and overall flavor, but my sweet tooth needs this recipe to be just a little bit sweeter. Add extra raspberries or drizzle with pure maple syrup!
