I’ve made it a point to focus my attention towards James Duigan’s Clean & Lean Pregnancy Guide while it’s still applicable! The book is packed with diet and exercise tips, as well as recipes for achieving a healthy pregnancy. This salad is just an example of the well-balanced, simple, colorful meals the book provides. Fit for a pregnant woman, but a hit with this pregnant woman’s husband, check out this Prawn, Avocado, and Grapefruit Salad.
How to make it an A+: These clean and simple ingredients need to be kicked up a notch for me. I added S & P overtop (always necessary), mixed in a little honey with grapefruit/olive oil dressing (maybe defeating the purpose, but a little honey can balance out the tartness of the grapefruit), and sprinkled sesame seeds overtop (because Avocado + Sesame Seeds=Heaven).
