I finally broke out my new Philips Smokeless Infrared Grill! I’m going to be using this Christmas gift way more often now that I see how easy it is to use and clean! Pepper’s Grilled Eggplant with Crispy Shallots was the first dish prepared on the grill, and it deserved the honor! Big flavor and simple prep made this recipe a new favorite way to prepare eggplant!
How to make it an A+: The flavor is really good, but the sauce is way too much. Either LIGHTLY drizzle overtop, or serve as a sauce on the side. Also, I will sprinkle some chopped peanuts overtop for next time!
