Pear, Prosciutto, Rocket and Gorgonzola Flatbread Pizzas

Using tortillas as a quick pizza base is ingenious. If it weren’t for the onion/sautéing step, this recipe would be fast! If you want cut out the step and just use fresh red onion, that’s fine. It’s also fine to pile anything you want on top of a tortilla and broil. But, specific to this recipe, it’s great. Sweet, salty, savory–everything! Note: Rocket is simply the U.K.’s term for arugula–no need to run to a specialty grocery store!

How to make it an A+: Go easy on the onions and gorgonzola. This recipe has BIG flavor, so no need to overdo it. Also, add the prosciutto before broiling. It needs to have a little bit of crisp!
