Peanut Chicken with Charred Scallions and Rice

 

 

Another Real Simple recipe that’s, well, real simple. Basically a one-skillet meal (aside from a pot to cook the rice), this dish is quick to prepare, offers a restaurant-quality presentation, and can be cleaned up during a commercial break! This Peanut Chicken recipe is also pretty healthy, which made it a perfect dinner to share with my husband, as well as a leftover lunch for my toddler (sans the skin). 

 

Rating: B+

 

How to make it an A+: The peanut sauce falls a little flat here. To get closer to a traditional satay sauce, spice it up with some red chili paste, or red chili flakes. Another way to kick up the dish: go heavy on the charred scallions which are AMAZING.
