Have a surplus of zucchini on your hands? Once a year, I have friends that grow their own begging for some to be taken off their hands. I usually take a couple, make a bread and sauté the rest in some olive oil and call it a day. Not next year. I will be begging for it all to make this amazing zucchini recipe. Before then, I will be happily heading to the grocery store and making Ina Garten’s Parmesan Roasted Zucchini to serve alongside a salmon fillet, or eat as a lunch by itself!
