Aren’t scallops just lovely? When I was getting this dish together, and later consuming, I could not stop thinking about how much of a joy scallops are to cook and eat. How to make it an A+: I love scallops and I love leeks so I was easy to please with this one, EXCEPT–full disclosure–I left out a major ingredient. I cannot stand olives. I’ve tried and tried and tried, but it’s just not happening. Nope, I don’t think the recipe was missing anything in their absence. But, do let me know if you try the recipe with!!
