Pad Thai with Maple Peanut Sauce

 

 

More from Clean Cooking magazine! The simple, clean recipes have really been helpful in setting my dietary intentions post-New Year’s resolutions, and for this pregnancy, in general. While this isn’t going to taste exactly like a take-out pad Thai (think more a quick and easy peanut noodle recipe), this version, with a maple peanut sauce, is tasty and fit for the whole family!

How to make it an A+:  Such an easy, healthy weeknight meal! Note: The link below suggests an egg which the magazine version did not, nor do I think it is necessary. It also suggests brown rice noodles, I just used basic, fresh fettuccine.
