I love this cake! This three layer Mixed Berry-Rhubarb Crumble Cake by Real Simple magazine is a perfect dessert to have hanging around all day long. Serve it for a cheeky breakfast, with an afternoon coffee, as a post-dinner treat, or a brunch buffet feature–anyway you slice it, this dessert has a place in your day. The raspberry/rhubarb/blueberry mix has a nice sweet-and-tangy thing going on, but feel free to use any other fruit combination you desire. I will try a traditional strawberry/rhubarb blend next, or combine those two with the blueberries, and just remove the raspberries to up the overall sweetness. Either way, it will not matter. This cake is like coffee cake meets angel cake with a fruity center. Enjoy!
How to make it an A+: This cake is moist, sweet, tangy, nutty, just delish. It’s quite thick, though, and needs a tad more moisture. Top with fresh whipped cream and some plump blueberries.
