How to make it an A+: A lot of work for not the best short ribs I’ve ever had. While the meat is beyond tender and tasty, I’d skip the gravy step and just drizzle some juice overtop at the end. I would also probably skip the entire miso-marinating, step in general. I get just as much flavor from some red wine and a lot of salt and pepper than the miso, and that step adds another 24 hours into the mix! And, boy, was this missing some potatoes on the side!
