Where are my matcha lovers?! I changed up a classic and am here to share Matcha-Almond Banana Bread! Natural sugars only, gluten-free, super-moist, and full of flavor! Enjoy!
Makes: 1 8.5×4.5 Loaf, serves 6-8
Active Time: 10 minutes
Total Time, Including Cooking and Cooling: 2.5 hours
- Coconut Oil, for the pan
- 3 Bananas, mashed
- 3 Eggs, lightly beaten
- 1 Tbsp Vanilla
- 3 Tbsp Date Syrup, or your choice of sweetener
- 2 cups Almond Flour
- 2 or 3 Tbsp Matcha, depending on how strong you want the matcha flavor
- 1/4 tsp Salt
- 1 tsp Baking Soda
- 1/2 cup Slivered Almonds
Preheat oven to 350° F. Line a 8.5 x 4.5 loaf pan with parchment paper, crossing two strips, and grease with coconut oil.
In a large bowl, whisk together all remaining ingredients until just combined, except the almonds. Once combined, fold in the almonds.
Transfer to the prepared loaf pan and bake around 50 minutes, until a knife inserted comes out clean. Let cool for at least an hour before removing from pan. Enjoy!
