Margarita Chicken Fajitas with Mushrooms and Spinach

Another BIG flavor meal from Chrissy Teigen and the Cravings cookbook! Her Margarita Chicken Fajitas with Mushrooms and Spinach satisfy a craving I didn’t even know I had–the desire for summer bbq chicken! I do not know what it is about this marinade or the cooking method, but the dish takes me back to something just off the grill at a summer party, or maybe a dish you would get from a smoky food truck at a festival. It’s a nice touch. The recipe is pretty quick and easy, making it doable for a weeknight meal as long as you remember to marinade the night before! See below for some suggested modifications!

How to make it an A+:  Like most of Teigen’s other dishes, this meal is RICH. It definitely needs to be cut with some sour cream, Greek yogurt, or even sliced avocado. Alternatively, you can use parts of the recipe (i.e. make the flavorful chicken but dress it with basic veggies, maybe some refried beans OR just use the mushroom/onion mix with some less-seasoned meats, or swap for chicken breasts over thighs.) Option three would be to skip the boiled marinade drizzle. I would still add the jalapeños (probably would chop and scatter more throughout, using fresh not pickled next time) as I wanted more of a kick to offset the sweetness of the onions and marinade. I’ve given you a lot of decisions to make here, but I’m confident you’ll figure it out! Good luck!
