Okay, these Make-Ahead Oatmeal Peanut Butter Bars from Real Simple magazine, are WAY. TOO. GOOD. I’ve unfortunately found a way to justify them as a breakfast, snack, and dessert, oh well. They are reasonably healthy if you ignore all the butter. I used the natural peanut butter and honey options. You could try coconut butter as a binder, instead, for a vegan alternative, but you’re still looking at saturated fats. What I say, #YOLO, and these 6-ingredient bars could be so, so much worse for you!
