The Waitrose Food magazine’s baked goods are always a hit. England, in general, excels at pretty much anything you can serve with a spot of tea. I’m always a sucker for anything with an almond or cornmeal base. Now, put the two together and I’m done. And, that’s exactly what we have here. This Lemon Thyme, Blossom Honey and Polenta Cake is absolutely delicious, and perfect to serve for company, or just to have lying around the house as a indulgent snack or a breakfast treat.
How to make it an A+: Really, it’s already there. This cake is just wholesome allover goodness. A tip: make sure its a fine-ground polenta. And if you’re in a rush, skip the Vanilla Cream and Honey Lemon Syrup–just dollop with Greek yogurt, drizzle with honey, and be on your way to dessert
