I just loveeee Indian food, but I haven’t had too much of it since I landed back Stateside. It is a cuisine so much more prevalent in the U.K., not just in restaurant choices, but in the recipes offered in your everyday books and magazines. I’m not sure if living in London increased my love for Indian, but it definitely increased the amount of Indian dishes I prepare in my home. This Indian Sweet Potato and Red Lentil Curry dish from Waitrose Food magazine is an amazingly simple and delicious intro to Indian cooking. Basically fool-proof. A giant, hearty stew that makes you say “Meat who?” I’m not even that much of a lentil person, but this dish, I will make over and over again. Bonus: You don’t have to peel the sweet potatoes! Time saver!
How to make it an A+: LOVE, LOVE, LOVE. Followed the recipe exactly. I don’t even think the coconut milk modification listed under “Tip” is necessary. Yum!
