This Harrisa-and Farro-Stuffed Acorn Squash was so healthy and FILLING! Like, WOW. While there is plenty to change, the health-factor is on point!
How to make it an A+: There wasn’t one flavor that stood out in a positive way. I would cut back on the salt and add sweetness to the squash in the form of some maple syrup. It was also the first time I’ve cooked acorn squash cut-side up, so I think I was missing some of the natural caramelization, as well!
