My weekly salmon fillet next to Tesco magazine’s Harissa-Roasted Root Veg is just too good. And too easy! I actually added the fillets to the sheet pan about 13 minutes before removing from the oven and everything came out just perfect. This side is very flavorful with a lot of nice textures and a great balance of cooling yogurt against the warm vegetables. A must-try!
How to make it an A+: I love all of this. It obviously depends on the brand of harissa, but the combination of that, the veg (I used chopped carrots, parsnips and celeriac), the quinoa and (Greek) yogurt, is A+ for sure! Note: I roasted everything at 400 degrees F.
