This is a unique twist on guacamole from Clean Cooking magazine, right here! A simple guac, topped with spicy chipotle adobo, but then a nice and cooling finish makes this Guacamole with Chipotle Adobo + Goat Cheese a star. I served heaping portions on top of beef and bean tacos and it made for an easy, weeknight meal.
How to make it an A+: This guacamole is absolutely delicious if done right. I’d love to give it an A+ in the “Rating” section, just out of fear that you might not read further, but the amount of chipotle sauce is just so off that it had to get a lower mark. In reality, if it was made with the entire 7oz, it would score a D-, but, you definitely wouldn’t read down after that. So, to make this simple guacamole absolutely perfect, just puree the entire can of peppers and top the guacamole to taste. Maybe two tablespoons worth. And tons of goat cheese. (I spooned Tbsp-sized portions of the excess sauce into a covered ice cube tray to then bag for later recipes.)
