Goat Cheese and Kale Waffles

After a busy weekend, I needed something simple for tonight’s dinner. These Goat Cheese and Kale Waffles not only fit the bill, they were fantastic! Breakfast for dinner seems like a guilty pleasure, but it included kale so I didn’t feel guilty at all…

 

Rating: A

 

How to make it an A+: Instead of just arugula, I topped the waffles with arugula dressed in olive oil and lemon juice, and sprinkled the entire plate with freshly ground pepper and sea salt. For the herbs, I used cilantro and dill, since that’s what I had in the fridge! Enjoy!
