Ina Garten does it again! She has given us a recipe that combines simple, powerful ingredients into one flawless dish, without any of them getting lost in the crowd. The peas, chives, mint, leeks, and onion in this Fresh Pea Soup, come together so beautifully, and present well with a perfect shade of green, that it’s my new favorite lunch for having a group of girls over. Easy to prepare, reheat, and then serve with Ina’s Garlic Croutons (see next post)–a cheery, warm bowl of this colorful goodness will be sure to brighten up these winter months!
How to make it an A+: Shave off a little salt and pepper until the end. Two teaspoons of salt will feel like way too much, and for you, it just might be!
