How to make it an A+: So delicious! Note: The recipe below varies slightly from the cookbook. At the end, before serving, drizzle a little lemon juice overtop. There was also no request for basil, just the mint, cilantro, and dill. Also, only fry the garlic. Finely chop just one fresh jalapeño and toss with the eggplant. (Aubergine=eggplant and coriander=cilantro in the U.K. FYI)
