Easter Brunch!

What an Easter! Our second in lockdown, and this time I prepared the meal under some loud roof construction, but it was all worth it! See below for detail on our Easter brunch lineup of a Honey-Glazed Spiral Ham and Watercress, Strawberry. and Toasted-Sesame Salad from Martha Stewart Living, a Leek and Parmigiano Reggiano Tart from Waitrose, Blueberry Bread Pudding from AllRecipes, and Carrot Cake Cupcakes from Sugar Spun Run! How to make it an A+: Perfection! Sweet and salty, and there isn’t much simpler than baking and glazing a ham!

How to make it an A+: While the salad is delicious, I would prefer candied almonds, and perhaps goat cheese over feta. Note: My store was out of watercress so I had to use arugula. Still very good!

How to make it an A+: It’s already there! Probably the creamiest quiche I’ve ever had!

How to make it an A+: I mean, you can’t really go wrong with this combo of ingredients. High marks for the overnight french toast effect, but taking a fraction of the time! Delish!

How to make it an A+: And the last home run of our Easter brunch, were these perfect cupcakes! I added some coconut for grass and bunny gummies on top, but just the cream cheese frosting is all they need! SO good!
