This recipe for a Crunchy Mediterranean Chickpea Bowl, from Real Simple magazine, produces a fun, colorful dish, fit for the whole family! Fried, salty chickpeas should be scattered on top of every recipe, or always in a bowl on the counter, as far as I’m concerned. They are just too addictive. But, sprinkled over some moist couscous, lemony beets, a sweet dressing, and a high-quality baba ghanoush–there’s just too much good going on here. Even my husband, who usually prefers a more straight-forward dish, thoroughly enjoyed this one. I hope you do, too!

How to make it an A+: I loved this, but it really depends on the quality of the prepared baba ghanoush you find. The one I picked up from Whole Foods was amazing, and truly helped out this recipe. Instead of making this a full meal, you could add some pita or wholegrain crackers and create a mezze platter in the center of your girls night drinks! Don’t expect leftovers–crispy, fried chickpeas NEVER taste as nice the next day, and I’ve tried everything.
