Cranberry Ricotta Cake

 

 

This cake is heavenly! I’ve had it hanging around this entire holiday weekend. Perfect for your Thanksgiving morning to hold you over until the main meal. A special holiday treat to have while you decorate the house for Christmas, listening to Christmas music and drinking hot cocoa. And super lovely to serve as a clean and simple dessert after a huge meal. It’s sweet, but with nice hints of tart cranberries, extremely moist, and very easy to put together. A holiday hit!

How to make it an A+: All it needs is something creamy on top. If serving for breakfast, top with Greek yogurt. If serving for dessert, top with sweetened whipped cream. Enjoy!
