I am just blowing through the Cravings: Hungry for More cookbook. Everything is just too good, I can’t stop! This Coconut Short Rib Curry (Beef Rendang) is no exception. Hearty home-cooking at its finest!

How to make it an A+: The recipe suggests to reserve the fat and juices leftover from searing the ribs. I would discard, as adding them back into the dish makes it wayyyyy too oily. Also, I was unable to find boneless ribs, so just used bone-in without a problem. Enjoy!
