In an effort to add more shrimp to my diet, here is Real Simple magazine’s Coconut-Curry Shrimp and Noodles! I love a good curry, coconut, and something quick, so this new recipe fit the bill. Check out the details below!
How to make it an A+: This is a very basic soup, but you can’t really go wrong with any of the ingredients. I had to majorly up the curry to give it a proper curry taste (I wouldn’t even say “kick”) and thin out the coconut milk with some extra chicken broth, though. While I just love the taste of coconut, if it is too thick in a soup, and you get no other textures than that coconut milky film, something has go to change. So, there you go.
