I was SO hesitant to crack open Chrissy Tiegen’s cookbook out of fear that I would instantly gain 10 lbs. With ingredients like Fritos and dishes like Hawaiian Pizza Jalapeño Poppers, the Cravings title is quite accurate, as are my concerns. So, I decided to ease into this one and started off with a salad. Her guilty-pleasure cooking includes classics on steroids, with explosions of flavor, and her Cobb Salad with Honey-Mustard Ranch Dressing is no exception. Healthy-sorta.
On a side note, if you have just moved and are rebuilding your life and spice cabinet, this recipe will help expedite that for you. With seven different spices, plus salt and pepper, this salad quickly jumped to $75.00 at Whole Foods. Oh well, it’s an investment and I’ve been know use spices loooong past their expiration dates.

How to make it an A+: This recipe makes a mean Cobb salad. The dressing is so powerful, and the rub on the chicken gives a spicy zing to most bites. It was, however, missing a few important Cobb salad flavors and textures. While there is onion powder in the dressing, I still missed the strong bite of a fresh onion. This could be achieved in the future with some chopped chives or thinly sliced red onions. I also NEED cheese in my salads, especially in a Cobb. While blue cheese is traditional, this Cobb salad version has more of a Southwestern feel, so a nice option could be some shredded pepper jack sprinkled over top.
