
Wow, what a way to celebrate my daughter’s little graduation. A fantastic chocolate cake that made me even feel a tiny bit healthy with its surprise ingredient! This Chocolate Courgette Cake is so flavorful and moist, thanks to the help of a courgette! And, for the American folks, a zucchini! How to make it an A+: It’s there! So moist and delicious! A few things to note: I do not have a deep round pan, so instead of making one large cake and then halving to frost, I just divided the batter into two round cake pans. This actually cuts the cooking time in half, as well, so made for a faster (27 minute) experience with less crumbs! Also, don’t expect a really rich chocolate frosting, think more of a hot chocolate-flavored frosting due to the cocoa powder!
